Rosé Wine– 100% Spätburgunder/Pinot Noir
The red colouring agent of the Spätburgunder/Pinot Noir grape is only in the grape skin. In order to obtain a rosé wine the grapes have to be pressed immediately. The short contact of the juice with the red grape skin produces a pale rosé colour. For red wines, fermentation of the must takes two weeks or longer. The contact of the red grape skin with the grape flesh produces red wines.
The classic rosé colour is L´oeil de Perdrix – the eye of the partridge.
Spätburgunder/Pinot Noir is a very high-quality and noble grape variety. The wines made from these grapes display very fine fruit aromas.
